Hear me out on this. If you’re thinking about making scrambled eggs, or poached eggs, or really any kind of eggs for breakfast, why not deviled eggs?

I’m serious. Devilled eggs are elegant, delicious, and everyone’s favorite snack at any big family gathering. For breakfast all you need to do is boil 8 eggs, cool them in cold water, peel them*, slice them in half, take the yolks out, put a little salt, pepper, and mustard powder and then mash them with mayo. The amount of mayo you use is up to you.

You don’t have to get all fancy and get out the piping bag. Just spoon the filling into the egg halves, sprinkle a little paprika or cayenne on top (or a dash of hot sauce, or a dash of Aardvark sauce, or whatever you want) and arrange them on a plate. When you bring that plate of deviled eggs out to your family, I guarantee that their eyes will get as big as saucers.

You can get fancy if you want. I’ve seen all kinds of garnishes and additions to the egg mixture: prosciutto, bacon, tapenade, micro-greens salad (ugh), tiny salsa, (less expensive) caviar (seriously, eggs on eggs is weirdly good),  chimichurri, fresh pesto, sriracha mayo, I’ve even had deviled eggs with a criss-cross of okonomiyaki sauce (and they were amazing).

In fact, invite the whole family into the kitchen, open the fridge and see what sauces you have just waiting to be thrown out. Make 16 eggs and try all the sauces!

Arsenal signed the scrambled eggs of defenders, Rob Holding, to a new contract. Congrats to him, we need British players.

And that’s all the actual Arsenal news there is to report. I have of course heard the rumors that Wilshere was offered a bigger deal and that Arsenal are going to poach Zeljko Buvac from Liverpool. The only thing I know about him is that 1) his nickname is “the brain” 2) someone on the Guardian pod said that he and Klopp had a falling out 3) Liverpool are now saying it’s not a falling out but Buvac’s dad is sick 4) it would be SO ARSENAL to sign Zeljko Buvac to replace Arsene Wenger and I’m glad I was first with the “Zeljko Who?” headlines.

Guardian, Mail, Sun, etc. if you want to use that headline when he signs for Arsenal, I will only ask for $1,000,000 as it is now copyright @7amkickoff and cannot be used without the express written consent of me.

*There is a science to getting peelable eggs. The only thing that works 98% of the time is 1) boil water 2 lower cold eggs into the boiling water 3) boil for 10 minutes 4) rinse with cold water. I have a pot that came with a steaming basket that I use just for this purpose but you could just use a slotted spoon. That’s the secret.

    Boil with baking soda, followed immediately by cold water. Shell basically rubs right off.

    I put this story of Buvac in the same category of stories about Ragnick, Henry and yes, Arteta – no f’n way. There is such a thing as being TOO bold in your pick.

    You could almost categorize the managerial options by choice of topping on your deviled eggs (which I agree are delicious), ranking from bold & daring down to milquetoast.

    Tabasco Sauce, Cayenne and Paprika (So bold the flavor might get lost) – Buvac, Ragnick, Arteta, Henry

    Cayenne and Paprika (Bold, but with flavor) – Jardim, Nagelsmann, Tedesco, Fonseca, Vieira

    Paprika (Not bold, but still, a little bit of spice) – Enrique, Rodgers, Benitez

    Plain – Ancelotti

    1. You know what? I completely gapped on the Dortmund connection between Mislintat and Buvac. That moves him into the Bold but with flavor category now. Totally plausible (unfortunately).

        I know you like Tedesco, and I admit to not watching the Bundesliga regularly, but hasn’t he only had like one season of big club managerial success (plus the tail end of last year)? That to me is also a huge risk. If he’s got the talent, he’s got the talent, sure, and I’d be excited to see how he’d work out if he came to us.
        But how do we know he’s not just another flavor-of-the-month who turns out to be a good-but-not-great manager in the longer term?? You want to see a guy over a couple of seasons, see how they deal with adversity and a dip in form, etc.

        Not saying rule him out completely, just that guys like him are more of tabasco, cayenne, and paprika picks, too.

          1. Paprika. He’d be a 1000% safe pick.

            But Paprika wants the PAPRIKA if you know what I mean. All of those candidates would demand a hefty transfer kitty and are 3-4 year solutions, not guys who would attach themselves to a longer term project. Allegri would laugh at a 50m transfer fund.

        1. I am a Tedesco booster, no hiding there. But, I know the possibility of him coming is remote at best.

          I want our own Pocchetino. I know the criticism of Poch is that he hasn’t won anything yet, but let’s be honest – he’s young, tactically astute, a very good coach that makes players better and develops young talent. That’s what I want for us. I think Tedesco, Nagelsmann or Jardim are the only three that could tick all those boxes. Jardim doesn’t know any English and I think that’s a big blow against him.

          1. I’m in complete agreement of wanting “our Poch” (except without the cynical professional fouling as a central team tactic).

            But Poch had several years of experience at Espanyol and Southampton before getting the Spurs job. Tedesco is really raw.

      1. Is peeling eggs really a thing people struggle with? I mean I’ve been doing this since I was a kid and it seems to me like there’s nothing to it.

        The only difference from your technique is that I don’t bother boiling the water first. I put the eggs in water before I put it to boil. 8-10 mins from when it starts boiling, and then rinse them in cold water.

        1. They aren’t hard to peel, they are hard to peel and get smooth whites because the inner shell membrane sticks to the albumin when you cook them your way. When you cook them my way, that membrane sticks to the shell.

          1. Huh. Maybe there’s a difference in the water, air temperature or something.. Do you also keep the eggs in the fridge, because I do. (Or else they spoil quickly because of the heat/humidity)

            The albumin sticking to the egg only happens if I don’t cool them properly. Not usually.

            Like I said, I find it strange that this is even a thing. Guess I just have a natural talent for cooking eggs. (It’s something and I’ll take it)

        2. For once I agree with Shard! I put the eggs into a pot with cold or room temperature water, and then turn on the burner. As soon as the water is boiling I set a timer for 6 minutes. 90% of the time, the shell (with inner membrane), comes off easily, and I’m left with a perfectly smooth egg.

          I’ve heard that eggs are harder to peel the fresher they are, but I have no idea if this is true.

    I think Buvac would fit into my belief that Mislintat is in effect the GM of this side and would be choosing the coach to run the team he assembles.

    Whether Buvac would leave Klopp after 18 years together is a question but the chance to manage Arsenal might just be tempting. I don’t think his departure has to do with a falling out though. I think Liverpool wouldn’t lie about this (though maybe I do) and I don’t see what would suddenly damage their relationship to that extent.

    I agree that this just seems like the move Arsenal would make. All in all, I would be in favour I think. On occasion we’ve shown we can play a good pressing game. Maybe this gets us doing that more often.

      1. Hey, on recent evidence, I’d take Liverpool’s “defensive problems” over our defensive problems (no scare quotes) any day of the week.

    2. It has a Jobs – Wozniak vibe to it though, the more I read now about Buvacs. Wozniak was the brains behind Apple, but would not have made a good CEO by his own admission. Buvacs may be the tactical genius behind Dortmund/Liverpool’s gegenpressing and counter-attacking style, but can he motivate the talent to execute? Klopp has charisma and a ferocious energy.

      I dunno… this would be a pretty bold pick.

      And it would be a giant, “hey, Liverpool, remember when you wouldn’t release Suarez from his contract? Well, we didn’t forget…”

      1. Yeah, I agree. People remember Hank Ten Cate? He was supposed to be the genius behind Rijkaard’s great Barca side, and was all the rage at one point over a decade ago. According to wikipedia, he’s currently managing in the UAE.
        Plenty of examples of great assistants (or respected assistants of great managers) who don’t make great managers. I feel like this happens even more in US sports. Some work out; most don’t get anywhere close to matching the success of their mentors.

        This is not to say I think it’s obviously a bad choice. It’s at least an exciting, bold, out-of-the-box one. Hopefully Gazidis does his homework and makes sure he’s got that charisma and leadership ability that Klopp clearly has in spades, and isn’t just a tactical brain. Presumably Sven can help with that call. I’d certainly be excited to see how he pans out.

        But it’s probably just wildly off the mark speculation…

  3. So guy takes personal leave and suddenly he’s off to Arsenal? Huh? What am I missing here? What does his dad’s illness have to do with changing employers?

    Whoever it is, I hope an announcement is made sooner rather than later, just to spare us from the endless speculation linking us to every available coach in Europe, even ones who temporarily leave the premises of their employer for non-footballing reasons! Allegri left the training ground to grab a coffee! He’s off to Arsenal!

    Ah. Anyway.

    Deviled eggs. Never my first choice at a snack buffet, but I’m always surprised how much I enjoy them. I have a love/hate relationship with eggs. They’re kind of gross, but kind of great, too.

    1. apparently the paper in Bosnia that first broke the news Klopp was going to Liverpool (Buvac is Bosnian) is where this story is coming from, for what it’s worth. and with Sven at Arsenal, it makes a decent amount of sense.

    2. I think it’s the most smoke we’ve had in weeks. But you’re right, it’s all speculation. Makes huge sense though when you think about how we’re practically assembling Dortmund v.2 at Arsenal.

  4. Dude. Deviled eggs with Japanese mayo, okonomiyaki sauce and some spicy togarashi powder. That’s the real deal. I boil them for 9 minutes to keep them on the softer side (depends on the size of the egg too).

    “Zeljko who” is exactly the same reaction I had when I read the news. Wanna know my cynical hot (or maybe in this case, cold) take? The board offered the job to a couple of experienced, high profile managers and they all demanded some amount of transfer kitty guarantee. So they went with an unknown name who would gladly this job without making demands like that. This way we stay cash flow positive and Ivan & Co. get to keep control over a younger manager. Of course, I have no basis for that cynicism.

    1. It’s not cynicism. I think the messaging from the club has been hinting at a younger/less renowned manager. Though he played safe by saying they don’t necessarily need to have a signing out of left field, Gazidis said the club has to be bold, and that a manager would have to fit into the structure. Mertesacker said that as far his information goes most of the staff and coaches will be staying. The club is leaking a 50m budget and bigging up the youth.

      I think they would have explored a few ‘name’ managers. Probably Enrique based on Sanhelli’s recommendation. But they are likely to go with the ‘bold’ choice and I think it will be based mostly on Mislintat’s recommendation. Which is why I thought of Tedesco, but Buvac makes sense. Maybe more so.

      1. Makes sense. Seems a lot is on Mislintat’s shoulders to get this right. One could even say we are putting all our deviled eggs in one basket.

  5. Wow! Thanks to you, Tim, daughter and son of 1-Nil were inspired to come up with a Mother’s Day breakfast for Mum. Check this out:

    Harissa spiced deviled eggs, whole grain avocado toast, strawberries and cream, fresh coffee. She’s not a big morning eater but I know she’ll go for the deviled eggs.

    As for Arsenal, we are going to get Portuguese Shaksusa or baked eggs from Monaco. This dish will pave the way for the purchase of a French egg dish, oeuf en cocotte. This dish will replace Sead Kolasinac and light up the league pairing with Monreal on the left wing.

    The Spanish dish (huevos rotos – broken eggs) also sometimes rumored to come to Arsenal will end up at Chelsea.

  6. Back in September 2013 Klopp was hit with a touchline ban after being sent off against Napoli in the Champions League for berating the fourth official.

    Asked about the manager’s absence at the time, Dortmund midfielder Nuri Sahin, who had a short loan spell at Liverpool the previous season, said: “Zeljko Buvac is basically Klopp’s twin, and he’ll be on the bench. “Both of them see football in exactly the same way.”

    Colin Bell, the former Leicester man who worked at Mainz with Klopp and Buvac, told the Times in December 2016: “It is unthinkable that they would do something without each other.

    “Zeljko reads the game very well, he has great footballing ideas and is always looking at finding new ways on how to play and train.

    “When Mainz started to play 4-3-3 it was different to the Dutch way, where you have a central striker and two out-and-out wingers. Zeljko wanted the players to keep moving around, interchanging, coming inside.

    “Andriy Voronin scored 20 goals for Mainz [in 2002-03] and he was all over the pitch, working really hard from central striker or right wing and left wing and it was so difficult for opponents to stop him and others. I can see those sorts of aspects in the Liverpool style now, especially with the quality of the player they have.

    “Closing down, surrounding opponents, going hunting for the ball – that all started in Mainz. That was one of Zeljko’s big things and he did specific training forms for that.”

  7. Interesting detail, Shard. So, based on what you’ve found, are you thinking that is our guy, or should be our guy? No more drawings of wolves on chalkboards but actual, detailed and consistent tactical game management?

    I never dream about Arsenal but I last night I had a strange dream. I was wandering around east Madrid looking for
    Atlético’s new ground, La Peineta/stadio Metropolitano.

    A Peugeot SUV pulled up (yeah, everyone’s making them, even Lamborghini, it’s sad), and the window slid down. It was Arsène Wenger OBE, who seemed to vaguely recognize me and asked, “Are you going to the match?”

    “Yes”, I said, feeling quite odd and dreamlike that he seemed to know me and stopped. “Well, hop in, I am going there too it seems” he said with a wry smile.

    And we talked, as fan to manager. He said wonderful, articulate things which I remember but will omit for the sake of brevity. Maybe they were not that interesting, it was MY dream after all.

    I asked how he was approaching the tie and he smiled his sly smile and said, “In my job we hope and plan and today maybe it is a little bit special for the fans, perhaps a surprise.” He put his finger to his lips and smiled again.

    We arrived at the stadium and his driver finally pulled up in a secure area after many convoluted turns and badge scanning. “Can you find your way? Enjoy the match”, Wenger wished as the driver opened my door. In my dream I had no ticket, no where to go. I started to exit and Wenger seemed to know as he called out,”tell them I sent you, enjoy!”
    “Thank you SO MUCH!” I yelled after the car disappeared down a tunnel to underground parking.

    I entered through a side door and was greeted at several points until I wound up at a bistro style table window-side to the center of the pitch in what looked like a hospitality area. A cerveza appeared with some tapas. A small man in Arsenal kit walked toward me. “The Boss asked me to stop by and say hi!”, smiling his genial smile. It was Santi Cazorla. I hugged him and told him I loved him. “Me also”, he replied generously, “Te amo to all the fans!”

    He played the full 90 minutes in wonderful form. He was everywhere, he was everything. He cycled the ball from deep and linked together the attacking play just he had 3 years ago. He found Özil who found Lacazette who finished coolly not once but twice before the half. Greizeman again got an equalizer shortly after the restart but Ramsey bundled in at 80 minutes and Welbeck was brought down just outside the area.
    Cazorla wound up, ran and scored a wicked curler than went around the wall and glanced off the post to spin to a stop in the back of the net. He kissed both his forearms looked up to the sky and I woke up.

  9. How hard it is to peel an egg is also related to how old the egg is, IF your peeling method doesn’t work this could be the case. Has the name Deviled eggs anything to do with the devil? Or why is it called that?

    1. Yes, I’ve heard this also! (See my comment above.) Something about if the egg has very recently been laid, it’s harder to peel once boiled.

      An internetual search indicates that ‘deviled’ in cookery means to use spicy seasoning. Devil = hell = hot. A number of languages make similar associations with their food (pasta fra diavolo, for example, is made with chili peppers), but in English this term has been used in relation to spicy dishes since at least the 18th century. You’re welcome!

  10. Deviled eggs are great but fried or scrambled eggs takes about 5 minutes tops. An omelette a couple minutes more.
